You can do it with us! We have come up with this cheese made from raw cow’s milk and aged in our caves, which is currently “unknown” meaning it has no name, hence unknown. We can write your name or a dedication on the wheel, and already this will make that wheel unique, but not only that, we will send you the certificate of ownership attesting to your purchase and the wheel can stay in our caves to age, or you can decide when to have it delivered.

Over the years, we have given the opportunity, with this cheese of ours, to celebrate birthdays, weddings, events, anniversaries, inaugurations, births, even marriage declarations… in short, a cheese that can have more reasons to be adopted, purchased or given as a gift. A new way of interpreting a cheese, not only as food but as a gift idea not only prestigious, and precious, but unique.

Each wheel is about 10 kg, but because they are made in facere, and not in molds, they can also reach a weight of 18 kg, its maturation can be 12 months but we also have 3-year shelved wheels.

The rind is not edible.

Ingredients: Raw whole cow’s MILK, milk enzymes, rennet and salt. Surface treated with grape seed oil and vinegar.
Size: 10 to 18 kg approx.

Product features:

Shape: Cylindrical, with a straight though slightly convex heel and flat faces that are slightly convex or convex;
External appearance: the rind may be smooth in the heel and slightly wrinkled in the face with web textures; color is light brown, more or less dark due to sweating during aging and treatment with oil and wine vinegar in the rind during aging
Internal appearance: firm, hard and crumbly paste, deep ivory in color and a medium-thickness claw
Odor: on the nose it has notes of cooked butter and vegetables such as dried fruit and a toasted near rind, but also a slight smell of underbrush, an animal scent of medium intensity
Taste: medium sweet, then medium salty, low acidity and a slight spiciness, but very pleasant and balanced.

Availability: Very limited, given the annual production of only 10 units.
Food pairings: Great cheese, to be enjoyed both as an aperitif, in the cheese plate, in appetizers with some sliced meats, but also at the end of a meal. Also great for use in cooking, cut into slivers over carpaccio or used to whip up pasta dishes. But because of its characteristic propensity to be used in ceremonies it can be used in buffets, tossed as an aperitif.
Wine pairings: it can be paired with large, very structured red wines.
