Cannon, is nothing more than a goat log of pasteurized milk, elongated in shape, precisely like a cannon, with a flowered rind and coagulated with vegetable coagulant, also suitable for vegetarian feeding.
It is quite intense as an aroma, so one must be interested in this type of goat cheese quite “impetuous”, given its aromatic importance, it may not please everyone.
It is recommended, in order to fully appreciate its characteristics, to consume it at room temperature, obviously being a flowery rind, the rind is edible.

Shape: Horizontal cylindrical in log shape, with irregular concave faces and irregular straight heel, sometimes also with irregularities as it tends to deform during ripening, creating convexities and depressions
External appearance: thin but firm, flowery rind, moist, its color is ivory, but where penicillium is present it is snow-white with possible darker spots
Internal appearance: its paste is cream and ivory in color with two distinct colorations, different from the undercrust in the center, soft and sticky when cut, no eyes, increasing its ripening in the undercrust it creams more
Aroma: of cooked cream, animal characteristic ircino, vegetable of fermented grass and boiled vegetables (cauliflower), yeast and slightly ammoniacal
Taste: medium sweet, slightly salty, medium acidity, and sometimes a slight bitterness especially in the rind, has a slightly sticky paste, but also quite soluble, lumpy rind that resists chewing, medium to high persistence the characteristic hircine.
