This butter, which we consider to be of above-average quality, is still produced by hand by churning fresh cream from the centrifuge.
The fresh cream, in turn, comes exclusively from Italian milk. The result is a product with an old-fashioned flavour, a taste that is not homologated, it is worth smelling it before tasting it, excellent to eat on bread, so raw, for breakfast or as an appetiser, but also to whip first courses, to make desserts, or on any other preparation in the kitchen, it will give that extra touch.
It is straw-coloured in summer when the cows feed on grass, and slightly lighter in winter when they feed on hay. It has a pleasant creamy aroma and an unmistakable, delicate flavour, obtained from the fermentation of the cream by selected ferments.

Shape: it is a parallelepiped with a rectangular base, but slightly irregular because on the sides it has the scallops of the mould;
External appearance: it has no rind or skin, at most there is the natural oxidation of the outside with a more intense color than the inside, the outer surface is smooth in color that can vary from creamy white to straw yellow, which varies in intensity depending on the seasons of the year as in summer will be more yellow than in winter;
Internal appearance: the paste is compact, cream-white in colour (but also in this case it will be more straw-coloured in summer), with no holes, but it may have streaks on the inside, as the buttering is not carried out mechanically and therefore the colour will not be homogeneous;
Aroma: a pleasant nose of cream:
Taste: very sweet, slightly salty with hints of fresh grass, has a very soluble paste, of medium-high persistence.

Raw on bread croutons, classic butter and anchovies, in the kitchen to flavor dishes

White wine still or blurred, depending on the combination
