The saga continues… after Antani and Prematurata, we add Sbiriguda, a cheese that has an unusual shape, but above all its use is unusual: grilled or breaded and fried.
It is not a usual cheese, it is not a mature cheese or a cheese with an intense flavour, it has an excellent taste and is a pleasure to be enjoyed alone or as a raw material in recipes.
Suitable for vegetarians since the rennet used to make this cheese is of microbial and non-animal origin, it is also good for those who are lactose intolerant since it contains less than 0.1 percent of lactose.

Shape: “brick” shape, rectangular parallelepipedal with flat faces and straight sides;
External appearance: thin, dry, slightly striped rind with a deep straw yellow colour;
Internal appearance: semi-hard, compact paste, the eyes are thin and evenly spread, of average regular size, the colour is straw yellow;
Aroma: interesting is the buttery lactic, vegetable fermented herbaceous, slight animal scent of stable and very aromatic floral;
Taste: the primary sensation is the medium sweetness, then the medium salty, a low acidity, the paste is compact, grainy, deformable and slightly adhesive.

Cubes to embellish salads, cut thinly for sandwiches, grilled or breaded and fried.
- Wine pairings:
Aromatic white wine.
