Taleggio DOP made strictly from whole raw cow’s milk, produced by one of the historic dairies in the province of Bergamo, still made for us in small 150-litre cauldrons by hand as in the past. We offer it in this green wrapping, it has a maturation period of about 60-70 days and is a product that satisfies all palates, very balanced and pleasant.
Excellent as a table cheese, but also thanks to its ability to melt very easily, its use in the kitchen is vast for classic or more imaginative preparations.
The rind is ‘discretionally edible’, what does that mean? This means that it can be eaten, but those who do not like it can remove it for a more delicate taste.
Pasteurized cow’s milk, live milk enzymes, rennet, salt. ALLERGENS: MILK and MILK protein.
Shape: parallelepipedal with a flattened square base, flat but slightly rounded sides and straight but slightly convex heel and rounded edge;
External appearance: thin, slightly moist and sticky rind due to mould that has spread outside, its colour is orange with white and grey-green sage mould;
Internal appearance: soft, moist paste, sparse, irregularly distributed eyes, pale straw yellow in colour;
Odour: it is characteristic and very aromatic, sometimes with truffle notes and a possible slight ammoniacal scent, in the middle of the paste there is a lactic taste of yoghurt and butter;
Taste: medium-low on the salty side, medium on the sweet side, with a nutty note, the paste is slightly sticky at the beginning, very deformable but all in all quite soluble in the mouth with a medium persistence, medium-high if eaten with the crust.

Enhances mixed cheese dish, appetizers, or first courses.
- Wine pairings:
Not very structured white wine.
