It is written The Game but reads Tègame, which in Tuscany is the name of a pan… From its name, clearly it’s a cheese suitable for use in the kitchen, especially if cooked, it can be used in various ways.
As we usually do, we play with the name of our cheeses, a name that can be read or pronounced in multiple ways and the inspiration came to us from a childhood game, where we all probably played with our classmates and friends. So, from a name, the idea of drawing a game on top of a cheese was born, but in the end who wins? The winner is the one who chooses to buy this cheese, because first of all he is struck by its aesthetic appearance, but after tasting it, he will also be won over by its balance and delicacy… and in the end, when he discovers how to use it cooked in the various preparations, as an ingredient, he will no longer be able to do without them.
This is a three-milk cheese (cow, sheep and goat) to which summer truffle curd is added and then left to mature so that it is covered with a light bloomy rind. Inside it has a soft paste, which in some forms and when the cheese increases in maturation tends to soften further.
Since the rind is flowery, it is edible.

Shape: cylindrical with irregular flat faces and convex heel
External appearance: thin rind, non-homogeneous flowery, white in colour, with the presence of dark dots and spots (due to the truffle inserted into the curd) and the presence of the colors used to embellish the upper face. The rind is elastic and has clear signs of the grill where it was left to dry in the first period of maturation
Internal appearance: soft, moist paste, very evident holes, fine to medium, evenly distributed, the color is pale ivory with the presence of black dots due to the presence of the truffle
Aroma: lactic of panna cotta, yeast and vegetables, slight hint of mushroom and tuber
Taste: a medium-high sweet, medium-low acid and slightly salty, it has a slightly adhesive paste, very adhesive and deformable in the mouth with a medium-persistent aroma, where a delicate sensation of truffle prevails in the retronasal.
