A cheese of our own creation, this line is defined by us as “the apothecaries” precisely because spices are used to flavour the cheese. It is very important to pay attention to the doses of the combinations between spices and cheese so that there is no prevalence of one over the other, although of course, among the various spices that we have used according to personal tastes will have a different effect from person to person … Therefore, they can also be called subjective cheeses.
The spices we use are: Rosemary, Fennel Flower, Chives, Chilli Pepper, but on request also with Curry, Cinnamon, Nutmeg and Black Pepper.
Usually the package is mixed with 8 pieces with two pieces for taste of the first four flavors, which in our tests are those that meet the highest consensus, but on request can also be made in a single taste.
For those who will taste the judgment, the important thing, however, since they have a soft dough, you should taste them at room temperature, so we recommend removing it at least a couple of hours before you taste it from the refrigerator.
Ingredients: Cow’s milk and pasteurized sheep’s milk, pasteurized bread, rennet and salt and spice of reference.
Size: about 300 grams.

Product features:
Shape: square-based parallelepipedal with flat faces and straight but slightly convex heel;
External appearance: thin and slightly moist and sticky crust due to the penicillium that has spread outside, its color is creamy white, but stained in some places according to its flavoring;
Internal appearance: soft, moist paste, with a finely uneven look, the colour is straw yellow, with a horizontal and central streak with respect to the slice according to the spice added;
Smell: of yoghurt and fresh butter, a vegetal note of fresh grass, but above all a characteristic scent of the flavouring itself of low or medium intensity, depending on the intrinsic characteristics;
Taste: sweet, slightly salty, has a granular paste and slightly adhesive at the beginning, but then also quite soluble in the mouth with a medium persistence, there may be some minor disturbances of a sandy type during chewing due to, for example, rosemary or fennel seeds… etc…
Availability: It is not in production all year round and availability is subject to a minimum of production, so it must be booked.
Food pairings: excellent to use in a new and delicious aperitif, but also to customize the appetizer, if dissolved in a bowl will give the best of itself in infusion with spice, even if used to season the pasta.
Oenological pairings: aromatic white wine.
