This cheese is made exclusively from sheep’s milk from Italian farms, flavoured with saffron, from which the name Pistillino comes. It is an unmistakable reminder of the pistil of the crocus from which what some call yellow gold comes, due both to the colour it gives to the dishes, but also to the cost of this delicious aroma. The unique and different processing technique from all other producers is the secret that helps to make this cheese so different from all other flavoured cheeses on the market.

Shape: cylindrical with flat faces and slightly convex heel;
External appearance: the rind is slightly basket-like, due to the striped spindle where the curd is placed, slightly wrinkled and greasy, the golden colour due to the saffron dissolved in the mixture;
Internal appearance: the paste is smooth, yellow in colour and has small eyes spread irregularly and unevenly;
Aroma: lactic of cooked butter, a spicy one reminiscent of saffron and an animal and vegetable scent;
Taste: slightly salty but sweet, slightly lumpy in the mouth and moderately soluble and has a good persistence.

Ideal in a cheese dish as an appetizer, as a main course, or melted in gastronomic preparations.
- Wine pairings:
Full-bodied red wine with good structure.
