Someone could say that they resemble the classic “Piedmontese tomini” but only in the external shape, even if in reality they are smaller in size.
They are produced in Piedmont, following the ancient Langhe recipe, but the variant is the use of a mixture of sheep’s and cow’s milk and this obviously determines a greater pleasantness and taste than the common ones that can be found on the market.
They have a flowery rind and a soft texture which becomes more creamy as it matures.
They can be eaten grilled or pan-fried, but these are also good to eat raw, or used in cubes in summer salads.
Each piece weighs about 90 g and are wrapped in overlapping pairs, since they are part of our line called “chess” they are precisely called pawns due to their characteristic shape.

Shape: cylindrical with flat faces and convex heel, sometimes they have irregularities both on the face and on the heel since during maturation it tends to deform, creating rounded and hollows;
External appearance: very thin and slightly moist crust, its color is pale straw white covered with a light coat of penicillium candidum which gives it a white colour;
Internal appearance: a few days after production, it has a slightly fine, uneven and irregular ivory-white paste, soft and sticky when cut, however, as it matures, the holes almost disappear and the paste becomes creamy;
Aroma: of fresh cream and butter, vegetable of fresh grass, but above all a scent of undergrowth;
Taste: very sweet, slightly salty, it has a grainy and slightly adhesive paste, but all in all it is also quite soluble and of medium persistence.
