The alternative to the smaller chessboard, is a cheese of not large size but still attracts much attention in a cheese trolley or in a counter of gastronomy just for its appearance, as it seems to look like a lady of chess. This, too, is a cheese we created to create curiosity in the consumer who, after seeing it, will certainly be tempted to want to taste it.
Inside it has a very tender dough that tends to cremate and “let go and then it can be enjoyed at its best if stored in the refrigerator, but removed at least an hour before tasting in order to express all its aromas and flavors.

cow MILK and pasteurized sheep MILK , pasteurized CREAM, rennet and salt. Treated in a crust with dye: annatto and charcoal.

Shape: square-based parallelepipedal with flat but barely convex faces and straight and slightly convex barefoot with a sharp edge;
External appearance: thin, slightly moist and sticky rind due to the penicillium that has spread to the outside, its colour is orange with white and black moulds where vegetable charcoal has been spread;
Internal appearance: soft, moist paste, irregular eyes spread unevenly, straw yellow in colour;
Aroma: of yoghurt and fresh butter, a vegetal note of fresh grass, but above all a characteristic animal scent of low intensity;
Taste: a high sweet, slightly salty, has a slightly adhesive paste at the beginning, very deformable but all in all quite soluble in the mouth with an aroma of medium persistence.

Mixed dish of cheeses, preparation of appetizers, risotto or short pasta.
- Wine pairings:
Not very structured white wine.
