To the line of the 7 deadly vices, we add ‘Ira.’ This is a buffalo milk-only cheese, which is seasoned and aged into a crust with almond oil and hot chili powder.

A cheese that well represents the characteristics of buffalo milk with a slight acidity, but also with all its sweetness, mixed with the flavor that characterizes its taste. A clean, well-made cheese, without burrs or imperfections and balanced. With our refinement, we have added the ripening time and the crust treatment with almond oil and hot pepper, which also justify its name, namely Ira.

Ira because if you also eat the crust the spiciness of the chili pepper radically changes its organoleptic characteristics. In fact, it is always advisable to start eating the cheese from the pasta, to perceive all the primary characteristics and then end with the crust.

The crust, as already mentioned, is edible. But, it is advisable to remove it for those who are not very tolerant of chili pepper.

In the first competition he was entered, when he had not even gone on sale yet, he immediately won the Bronze medal at the World Cheese Awards 2020-2021 in Oviedo, Spain.

Ingredients:Pasteurized buffalo MILK, LACTIC ferments, rennet, salt. Treated in a crust with oil and chilli pepper.

Product features:
Shape:
cylindrical with flat faces, sometimes slightly convex and straight barefoot, with a barely beveled edge;
External appearance: the crust is brick red due to the chili powder and greasy due to the almond oil. The crust has a hard consistency and in the face there are signs of the scab and mat;
Internal appearance: loaded ivory-colored paste – unloaded straw, semi-hard and compact, slightly grainy and dry, with fine and medium holes homogeneously distributed, also has a medium nail of more intense color than the paste;
Smell: as a first sensation prevails the lactic of cooked butter, vegetable of fermented grass and boiled potato, but also a slight sensation of dried fruit and the characteristic spicy of chilli in crust;
Taste: medium sweet, medium-low the salty, medium-low acidity, you do not perceive the bitterness, but as a trigeminal sensation the spicy prevails (if you eat the crust) and with a medium-high persistence.

Availability: almost all year round, but with limited quantities.

Gastronomic pairings: can be used at any time of the meal and in any way. Both as an aperitif, as an appetizer, on a cheese plate as a second course. It can be used as an ingredient for first courses, to stir in risotto, and to make gratins.

Oenological pairings: Structured white wine and full-bodied red wine, but also an elegant bubble.
