It has an irregular shape since it is made in fascere (cheese moulds) as it used to be, instead of the classic plastic moulds being used. The fact that it is a RISERVA is already a sufficient guarantee of quality, plus this cheese after being matured for more than 12 months is subjected to an expertisation with a hammer, after which it is matured for a further 12 months.
When it has reached optimum maturity, it undergoes a light smoking treatment with the smoke of Kentuchy tobacco from the Val di Chiana, used in the production of the well-known Tuscan cigar, thus making it a unique product.
Since this pecorino is made with kid rennet, it already has a pungent character that goes well with being tasted with a Tuscan cigar and perhaps the right combination with grappa, whisky or rum.
A meditation cheese par excellence, unique and rare in its being.
It takes its name from a well-known Cigar Club in the Val di Chiana, the ‘Maledetto Toscano’, which Club, by kind permission, allows us to call this truly rare pearl by the very name of the Club.
The rind is not edible, but when you eat it, you have to leave it in order to savour the cheese while you also notice the characteristic smoky notes that the rind has acquired through the smoking process.

SHAPE: it is cylindrical but not perfectly so, it has straight 12 cm sides and flat but concave 20-28 cm diameter surfaces.
EXTERNAL FEATURES: the colour can vary from a light to dark brown, and depends on its sweating while ageing, the oil and vinegar treatment of the rind while maturing and the final smoking stage with tobacco smoke.
INTERNAL FEATURES: the intense straw-yellow paste is hard and compact but crumbly, with some eyes and a medium sized undercrust.
AROMA: melted butter and roasted nuts can be perceived as well as a very intense barn scent. The rind is smoky.
TASTE: intensely savoury, piquant and pungent with flavours which may increase with ageing, yet it is very pleasant, balanced and tasty. Very persistent.

Enjoy with friends or as a meditation cheese. Can be used in various pairings.
- Wine pairings:
It can only be paired with great wines, but whoever wants can also measure it with agricultural rums, grappa, armagnac, whiskey.
