Girotondo is not what you think when you look at the pic… it is not the most famous Swiss cheese, but a completely unknown sheep’s milk cheese produced only with Italian milk, created precisely to give prestige to our dairy skills too.

It took almost two years of trials and experiments to create this cheese, but then we
managed to make the cheese with the ideal texture to also be used with Girolle. Ideal for appetizers or to garnish meat carpaccio, but also to decorate dishes.

However, its ideal use is as an aperitif to combine with an elegant bubble wine, a cheese capable of astounding, exciting, thanks to its way of being presented, a flower of cheese that amuses, in fact it is another of our “fun” cheeses. entertaining, as it’s great to see the cheese petal being created and great when you taste it. It cannot go unnoticed.

Ingredients: pasteurized sheep’s MILK, live lactic ferments, rennet and salt. Surface treated with oil.

Packaging: naked form (but it is also possible to pack it in the vacuum bag)

Product features:
Shape: cylindrical, with a slightly convex side of about 8 cm in height and almost flat sides of 8-9 cm on each side;
External appearance: the rind is hard and has a deep straw color with darker and
irregular spots that vary according to the seasoning and therefore the aging with the
possible presence of moulds;
Internal aspect: it has a hard and compact but crumbly and slightly eyed texture, straw yellow in color with a nail of almost half a centimetre;
Smell: there are animal notes (clean sheep’s coat) and stable, it has notes of cooked
butter and vegetables such as toasted dried fruit, and a hint of undergrowth;
Flavour: it is delicately sweet then savory but not salty, in the mouth we find the usual sensations perceived on the nose but much more amplified.

Availability: limited.

Food pairings: spectacular as an aperitif, as a playful moment with friends, but also in the kitchen as a decoration of dishes but also to garnish carpaccio or risotto.

Wine pairings: fantastic with a classy bubble, perfect with the classic Franciacorta
method, Trento Docg, but also with many other Italian or French types.
