This cheese is an invention, born from the desire to create a “dessert” cheese or a cheese to be enjoyed instead of dessert, at the end of a meal or even as a meditation… here we succeeded! This cheese is one of the cheeses we are most proud of as it has won the most metals:
In 2014 it won the Award of Excellence at INFINITI BLU, and in 2015, 2016 and 2017 always at the same competition it obtained the recognition of Quality. In 2016 it also won the Gold Medal at ALMA CASEUS in the blue cheese section.
At the World Cheese Awards 2017-2018 in London it was awarded the Bronze Medal.
At the 2018 San Lucio Trophy it won the Silver medal.

It is a blue pecorino matured under the alcoholic bath and the varieties of raisins used by Pasticceria Bonci di Montevarchi for the production of their famous PANBRIACONE.

It has a compact and crumbly structure that sometimes creates problems in cutting it, also due to the higher humidity to which it is subjected in the aging phase, but the result is surprising, since inside has remained its strong character, which is mitigated and sweetened by the raisins and the water itself. A cheese that excites, absolutely to be enjoyed with the rind and its raisins, where we find the sugar concentration that makes it so unique and very balanced.

Product Features:

Shape: cylindrical with flat faces and straight sides and freshly beveled edge;
External appearance: in the wrinkled and moist crust of medium consistency, the raisins that keep the surface wet are present in the two faces. The loaded straw color tends to be amber and in some places darker green patches may be present;
Internal appearance: nail (under rind) present of medium-low intensity, the paste is crumbly, in fact if a suitable knife is not used it tends to crumble, the color varies from ivory white to straw yellow, the blueness of color tending more to green than to blue with a not always homogeneous distribution of molds;
Smell: interesting and very particular, since it mixes a characteristic floral and fruity alcohol that blends with the stable animal, followed by the vegetable of dry porcini mushroom and hints of wood and mold;
Taste: savory, pungent, but sweetened if the crust is also eaten and in particular if the raisins are also tasted, it has a high persistence.

Availability: limited.

Gastronomic pairings: we absolutely recommend it as an end-of-meal or meditation cheese, but those who
want, you can also indulge in other uses for the preparation of dishes.

Wine pairings: Any sweet dessert wine, with very little acidity.
