This is a high quality fresh cheese, made following our own recipe and using only fresh Italian milk without preservatives or food colouring. We are truly proud of this product; we see it as a cheese to conquer new customers, in fact those who try it usually come back for more. Besides quality, it has the advantage of its small size, smaller than the standard stracchino, and the pieces are hand cut and wrapped one by one in a lovely and attractive wrap which will surely appeal to the customer.

Ingredients: fresh Italian cow milk, live milk enzymes, rennet and salt.
Weight: Approximately 250 g bun-like pieces.
Packing: 8 bun Styrofoam tray.
Shelf life of packed product: 12 days.

Cheese characteristics:
SHAPE: it is shapeless, looking at first like a longish rectangular bar however, after it is aged it develops a very creamy consistency.
EXTERNAL FEATURES: milk white, some spots are more solid while others are creamier.
INTERNAL FEATURES: the colour both inside and outside is identical, the paste is very soft and creamy, when cut it glistens.
AROMA: a definite yogurt and fresh cream aroma as well as traces of yeast.
FLAVOUR: sweet with a touch of salt, the paste is sticky on the palate at first, then it delicately dissolves in the mouth, very tasty and inviting.

Availability: all year, but must be ordered.

Food pairing: it is a typical meal cheese; however, considering its freshness and supple nature, it can be used like a spread on piadina, to make antipasto dishes and first course dishes.

Wine pairing: cool and not structured white wine.
