Pasteurised sheep milk cheese, raw, expertly matured for around 90 days or more, and thanks to time and nothing else it acquires its particularly strong but at the same time delicate and sweet taste.
The production process is the same as Crosta Rossa and Crosta d’Oro cheese, but the maturation times and processes carried out during the maturing phase vary.
In the past, traditionally, the rind was treated with “sludge” (i.e. olive oil grounds, pomace), and acquired a dark brown, almost black colour, but this oil gave the rind an unpleasant odor, therefore this treatment is been replaced with grape seed oil and charcoal.
In the end, before sending it to customers, we always treat it in rind, with pimaricin to fix the color.
The rind is not edible.
Pasteurised sheep MILK, salt, rennet and selected milk enzymes. Surface treated with grape-seed oil, vegetable charcoal and pimaricin E235.

SHAPE: bowl-shaped, typical of all Tuscan pecorino cheeses, cylindrical with two flat surfaces and rounded sides.
EXTERNAL FEATURES: thick rind, ranging in colour from dark brown to black, due to the olive oil sludge treatment.
INTERNAL FEATURES: the paste is dry and chalky in texture, white to very pale yellow and a very dark undercrust just below the rind, due to the colour of the rind itself. It can have small eyes with an irregular pattern.
AROMA: scents of dry grass and nuts with some medium intensity hints of sheep and barn.
TASTE: quite balanced, the salt can be perceived, medium intensity but sweet and is crumbly when eaten. Good persistence.
- Food pairings:
Ideal both for placing it on a cutting board or in an appetizer with cold cuts, but also to end a meal, it pairs well with: pears of the Abate variety, pepper mustard or onion and orange jam, dried fruit and full-bodied, old red wines .
- Wine pairings:
Perfect with full-bodied aged red wines.
