The scamorza cherries are the size of a walnut. Scamorza is a spun-paste cheese of whole pasteurised cow milk. The paste is like mozzarella paste, only drier. After the paste has been made it is rolled with a pin with wholes that cuts the paste into “cherries” all of the same size, they are first cooled and then cold-smoked (with Beechwood chips, below 18°C), so they can acquire the distinctive aroma and flavour. Can be eaten cold with tomatoes, green salad and any vegetable, however, for best results we recommend eating them warm, either warmed in an oven, microwave or a pan, just make sure they are served warm

SHAPE: the size of a walnut and like small eggs.
EXTERNAL FEATURES: the medium consistency skin is smooth, glossy and uniform. Pale straw yellow when fresh, more intense if drier and golden if smoked.
INTERNAL FEATURES: the paste is cream white, stringy, compact and soft, when cut it is uniform and even.
AROMA: carries a delicate buttery and warm milk aroma, while if smoked it has intense smoky scents.
TASTE: tasty and salty but delicate if not smoked, while a bit pungent if smoked.
- Food pairings:
Great for aperitif, wrapped in speck, prosciutto, or bacon, and slightly warmed in the oven. Also suitable for salads or with cold cuts on skewers.
- Wine pairings:
Best paired with a very tannic red wine.
