The name comes from the color it acquires thanks to the treatment in the crust with the liqueur alkermes, which in addition to giving the color purple, it matures inside and makes it acquire the characteristic aroma in the crust. This is the third cheese of the line of cheeses called “witty” or treated in a crust with spirits, however alcoholic or liquor, taking inspiration from a great French cheese Epoisse, we thought to propose to our customers this line of cheeses that as well as good to eat, must also be fun and witty to see.
The result is difficult to explain, but certainly does not leave indifferent, the only defect of this cheese that with the passage of time the characteristic coloring that acquires during aging, with the passage of days lightens until it becomes almost white, but this does not affect the organoleptic characteristics it has acquired during maturation, it is simply a physical chemical process, both the evaporation of the liqueur, but also the acidity of the cheese along with mold, gradually fade away the typical color.
It is recommended, in order to fully appreciate its characteristics, to consume it at room temperature but leave it closed in its packaging and discard it only at the last moment before eating it and of course, the crust is edible.
Pasteurised cow’s MILK, pasteurised sheep’s MILK, pasteurised CREAM, salt, rennet. Treated in crust with preparation for Alkermes 70% VOL (alcohol, water, colouring agent: E150b, caramel, natural flavourings, flavouring identical to natural flavourings, colouring agent E122 azorubine).

Shape: flattened cylindrical, with irregular flat faces and straight sides, but which tends to become convex;
External appearance: very thin, moist and sticky rind, its colour is purple-pink with the presence of white moulds of penicillium candidum.
Internal appearance: ivory in colour, soft and sticky when cut, with a few sparse and irregular holes that increase its ripeness, the holes almost disappear and the paste cremifies;
Aroma: of cream and yoghurt, floral of flowers, yeast and slightly animal;
Taste: very sweet, slightly salty, and a hint of acidity, has a slightly adhesive paste, but also quite soluble and low persistence.

Appetizer in the cheese chopping board, dessert dish.

Structured white wine, bubbles.
