This cheese made exclusively with sheep milk from Italian farms flavored with truffles, we called it Tuberino precisely because such a valuable product has been combined with another equally precious food… cheese. The unique and different processing technique from all other producers is the secret that contributes to making this cheese so different from all other flavored cheeses on the market.
Taste it and you’ll realize it. On request it is possible to have it even in the smallest size of 400 grams instead of 800 grams like this.
Edible crust.
Pasteurized sheep MILK, 2% truffle flakes, lactic ferments, rennet, and salt. ALLERGENS: MILK and MILK protein
Shape: cylindrical with flat faces and slightly bowed sides;
External appearance: the crust is slightly “basketed” due to the striped moulds where the curd is placed, just wrinkled and greasy with the presence of pieces of truffles that can also be seen outside;
Internal appearance: the pasta is smooth, straw-colored with the presence of fragments of grated truffle. The cheese has a small eyelet scattered irregularly and not homogeneous;
Smell: lactic of cooked butter and an animal and vegetable scent,but what emerges most is this truffle scent;
Taste: balanced, slightly salty but sweet in the mouth. It is slightly lumpy and medium soluble and has a good persistence.
- Food pairings:
Ideal in a cheese plate as an appetizer, as a second course, or melted in gastronomic preparations.
- Wine pairings:
Full-bodied red wine with a good structure.
