Smoked braid scamorza is a stretched curd cheese, characterized by its braided shape and the unique taste given by the smoking process. Originating from Southern Italy, this cheese is produced with cow’s milk and follows a process similar to that of mozzarella, but with lower moisture content. After curdling and stretching, the paste is manually shaped into a braided shape, which not only gives it a distinctive appearance, but also a firmer and more elastic texture.
Once formed, the scamorza is subjected to a natural smoking process, usually with beech wood. This gives the cheese a golden crust and a characteristic, slightly sweet and smoky aroma, which integrates perfectly with the delicate, lactic flavor of the paste.

Aroma: on the nose there is a delicate smell of butter and cooked milk, whereas for smoked products there is an intense smell of smoke;
Taste: tasty and slightly salty, but delicate if white, pungently smoky if treated with smoke.

Extremely versatile in the kitchen, it can be eaten on its own, as an appetizer or snack, or used in a variety of dishes. It is excellent when dissolved in baked preparations, such as pizzas, focaccias and lasagna, or to enrich sandwiches and toasts. Its ability to blend and its smoky flavor also make it ideal for enriching grilled meat and vegetable dishes.
