This cheese is the result of our continuous pursuit of perfection, with the aim of further elevating an already high-quality product. For 2024, we have created a limited edition of only 100 wheels, an exclusive offering designed for our most discerning clients.
The aging process saw the Crosta d’Oro mature for several months before being transferred, in July, to the Gualtieri pit in Sogliano sul Rubicone. There, following tradition, it remained until November 2nd, when it was removed from the pit and brought back to our workshop.
The intense aroma that characterizes the cheese once it is removed from the pit is a unique sensory experience. When the cheese arrived in our workshop, the scent filled the room, reflecting the particular alchemy created by the natural conditions of the pit.
After tasting it, we can confidently say that it is the best Fossa cheese we have ever offered. This very hot summer made the cheese sweat and lose a lot of weight, so we were expecting something very spicy. Instead, it is sweet, flavorful, and intense, but not salty or overly spicy. Its standout feature is its fragrance and aroma, so intensely unique that it can be compared to that of truffle. In fact, it is a precious and rare cheese.
The rind is edible and also rich in aromas, so don’t miss the chance to taste it.

Shape: each one different from the other, undefined shape with the typical irregularities that characterize it;
External appearance: hard and compact but very thin crust, greasy, smooth and pale straw yellow in color with darker, almost amber spots.
Internal appearance: compact ivory-colored paste with the presence of pink spots and flakes and cavities where the dissolved fat is concentrated, due to the fermentation undergone in the pit. It has fine, irregular and shiny eyes and a very crumbly, compact and hard almost chalky paste, which grains when cut;
Aroma: lactic hints of melted butter, meat broth, fermented grass vegetal, a very pronounced animal scent and especially in the crust a sensation of tuber and undergrowth;
Taste: sweet and savory flavor, light acidity and slightly bitter (especially in the crust), with a spicy but not high, the aromatic part is very persistent.
- Food pairings:
Excellent for making first courses or even just for grating it on top.
Given its intense flavour, anyone who wants can pair it with an onion jam, wildflower honey, or a fig mustard, but at this point it no longer pairs well with wine.
- Wine pairings:
Amarone, Brunello or other important red wine.
