This for us is the Gorgonzola Dop par excellence.

One of the best known and most prestigious Italian cheeses in the world, we can also call it unique for its characteristics, since even if in other parts of the world excellent blue cheeses are produced, Gorgonzola Dop is, and remains a cheese with unique peculiarities in its structure and flavor.

Obviously, it is not aged by us, since it is a PDO, but our work of selection has been long and difficult. Our actual producer was chosen after careful attentive evaluations, analysis, tastings and tests that have led us to mature the choice that is not only about organoleptic or structural characteristics, but reliability and seriousness of the producer, historicity and size. We don’t blame the other, albeit good producers, but we made our choice believing that we were making the best choice with the producer, whose characteristics most resemble our working visions.

We could tell you, how good it is and how good it looks, but already many sites do this… we limit ourselves to telling you the reasons for our choice and presenting you the differences of the various types of Gorgonzola that we have included in our assortment: this Gorgonzola PDO is spicy, sharp and intense, for all those who are lovers of this type.

It is not always available; in fact, it is preferable to order it, and upon request, it is possible to have it in full- or half-form.

Cheese for cooking (but be careful with the doses) or to enjoy at the end of a meal, wanting it just instead of dessert or for meditation.


In the World Cheese Awards 2022-2023 in Newport, Wales, it was awarded the Bronze medal.

Ingredients: Pasteurized MILK, salt, rennet.
Size: About 6 kg (half wheel); 12 kg (whole wheel)

Product characteristics:

Shape: Cylindrical with flat faces and straight heel with rounded edge;
External appearance: thin, wrinkled, sometimes slightly cracked  pinkish and light brown uneven rind
Internal appearance: the paste is firm, moist and deformable, the color of the paste is deep ivory and the blue-green marbling, without eyes;
Odor: intense barn animal, vegetal with clear hints of underbrush and porcini mushroom, an ammonia note and a cooked lactic;
Taste: medium sweet, medium to high salty, low acidity and very high persistence.

Availability: to be reserved.

Food pairings: highly recommended both for uses in cooking, but also as a main course or cheese at the end of a meal.

Wine pairings: Any sweet dessert wine.
