It is a small-shaped cheese, used mainly for sales during the Christmas and Easter periods, as it is very suitable for sale as a whole unit, ideal for making a gift to include in a food basket or to purchase for families with a few members who do not want to deprive themselves of purchasing a mini-wheel of cheese which can also be defined as single-dose, you start and finish.
However, outside of holidays we like to define it as “fun cheese” to make an unusual but traditional aperitif: dig out the cheese with a special knife and combine this cheese with red wine, so, the cheese on one side, the flask of wine on the other, some Tuscan bread…. nothing but spritz!!

SHAPE: cylindrical, the flat surfaces are about 8 cm wide, the slightly rounded sides are about 4 cm thick and the edges are not sharp.
EXTERNAL FEATURES: the rind is hard, slightly moist and wrinkled; it has a light brown colour with darker shades.
EXTERNAL FEATURES: the paste is ivory white and chalky, it tends to break when cut and crumbles when touched.
AROMA: dairy and cooked butter scents as well as a hint of nuts and green walnuts.
TASTE: it is salty and sweet, of medium intensity and crumbles in the mouth. Medium persistence.
- Food pairings:
Suggested on a cheese platter or as starter with cold cuts. Great with Doyenne du Comice pears, nuts, raisins, pine nuts, and walnuts.
- Wine pairings:
Best with red wines that are not very full-bodied and low in alcohol.
