After the prelate Cardinal, we could only think of someone higher up, a saint… then, since we are in Tuscany, why not create a cheese that is impregnated with a typical Tuscan dessert that is the combination of cantucci and Vin Santo. Many people think that we are crazy, the result, once you taste this cheese, is really incredible on the palate. This is the fourth cheese in our line of “witty” cheeses, that is, treated in a crust with spirits, however alcoholic or liqueur, inspired by a great French cheese Epoisse, we thought to offer our customers this line of cheeses that as well as good to eat, must also be fun and witty to see.

San Tino, is a cow’s and sheep’s milk cheese that is repeatedly washed with vin santo and then treated in a crust with powder of Tuscan cantucci. This unusual combination, produces a cheese that is ideal for dessert, but not only, you can also eat at the beginning of the meal and leaves at first banned, but then pleasantly impressed by the balance and appetite that we have managed to give this extraordinary cheese.

It is recommended, in order to fully appreciate its characteristics, to consume it at room temperature but leave it closed in its packaging and discard it only at the last moment before eating it and of course, the crust is edible.

Ingredients: Pasteurized cow’s milk and pasteurized sheep’s milk, pasteurized bread, rennet and salt. Crust treated with vin santo and powdered cantucci (MILK, Eggs, flour, almonds).
Size: about 300 gr.
Packaging: shape wrapped with transparent film.
Duration of the packaged product: 25 days.

Product features:
Shape: flattened cylindrical, with irregular flat faces and convex sides;
External appearance: very thin, moist and sticky rind (also due to the presence of the powder of the cantucci soaked in wine), its colour is amber, light brown, or rather I would call it biscuit colour.
Internal appearance: straw-coloured, soft and adhesive when cut, with a few sparse and irregular holes that increase its ripeness, the holes almost disappear and the paste cremifies;
Odour: fruity with ripe figs and dates, lactic with cream, almond and slightly animal dried fruit;
Flavour: very sweet, slightly salty, and a hint of acidity, has a slightly adhesive paste, but also soluble and low persistence.

Availability: since this is an experimental product, availability is not always required.

Food pairings: fantastic as a dessert, but it also makes its mark on the cheese plateau.

Oenological pairings: Moscato, vin santo, but still a sweet wine.
