This cheese is made exclusively from sheep milk from Italian farms where pieces of pistachio are added to the curd during processing. The unique and different processing technique from all other producers is the secret that helps to make this cheese so different from all other flavoured cheeses on the market.

Shape: cylindrical with flat faces and slightly convex heel;
External appearance: the rind is slightly canestrated, due to the striped spindle where the curd is placed, slightly wrinkled and greasy;
Internal appearance: the paste is smooth, of a pale straw colour with the presence of pieces of pistachios, it has small eyes spread irregularly and not homogeneously;
Aroma: lactic of cooked butter, an animal and vegetable scent of dried fruit;
Taste: slightly salty and moderately sweet, in the mouth it is lumpy and moderately soluble with a good persistence.
