This cheese is made only from goat’s milk and is defined as a lactic-presamic process. Besides being aesthetically pleasing, it is very appetising and appetising due to its high acidity, which is balanced against the rest of the flavours.
We always use different spices and flavourings for the colours: cinnamon powder, ginger, turmeric, spinach, paprika, charcoal and beetroot. There is no rule for the combination of colours, so that everyone can identify with one cheese or another, depending on their beliefs.
The rind is edible, but it must be eaten as soon as possible to avoid the onset of mould, as long as it is white it is fine, the rind can also be eaten, but if it turns grey or green it is advisable to remove the rind and eat only the inside.
Pasteurised goat’s MILK, rennet, salt, (cinnamon powder, ginger, turmeric, spinach, sweet paprika, charcoal and beetroot added to rind).

Shape: cylindrical with irregular flat faces and an irregular straight heel, all because it tends to deform during ripening, creating curves and hollows;
External appearance: a very thin rind (in some cases skin, as it peels off), wrinkled and wrinkled and very moist and soft, with a light amaranth colour and varying colouring;
Internal appearance: the paste is cream-coloured, chalky but slightly creamy on the undercrust, it has no nails, in the centre are whole morello cherries;
Smell: the nose smells of yoghurt, yeast, a delicate fresh herbaceousness, but above all the fruitiness reminiscent of sour cherry jam, accompanied by a typical animal smell of goat, in particular of stables, overall very aromatic but harmonious
Taste: medium sweet, high when eating morello cherries, medium savoury, medium-low acid, all in all very balanced with its characteristic ‘symphony of aromas’;
- Food pairings:
It can be used to enhance a cheese plate or excellent in an appetiser with sliced meats.
- Wine pairings:
A structured white wine (the combination will be difficult given the diversity of spices within the same cheese)
