The fifth cheese in the line of the 7 deadly sins is Envy (Invidia), with a pink, or rather intense fuchsia, color when freshly packaged, then gradually tends to fade as the days pass
The base is a buffalo milk robiola with a flowery rind, which is subjected to three maturation processes, first we wait for the excess humidity to dry, then the rind is treated with liqueur made with buffalo milk and peels of lemons infused in alcohol, finally as a last step we add the dragonfruit powder (Pitaya).
The result is a cheese with a decidedly different color than usual, a bright fuchsia as soon as it is packaged, but progressively the natural coloring in contact with the acidity of the cheese tends to fade and become first pink, then light pink, up to antique pink, but this does not affect the taste, given that the color also manages to clearly penetrate the inside, in fact when you open the cheese you can see that the color is no longer pure white, but tending towards pink in the undercrust.
The strong characterization in the taste of this cheese is certainly due to all three phases, with a decidedly balanced result both from the point of view of flavors and aromas.
Pasteurized buffalo MILK, lactic ferments, rennet and salt. Treated in rind with alcoholic infusion of lemon peels and powdered dragon fruit.

Shape: irregular cylindrical shape with flat or slightly concave inside or even oblique faces and the heel sometimes straight, sometimes irregularly convex, a sign of its maturation.
External appearance: wrinkled and flowery rind, never the same, because being handcrafted it can be different every time, also from the point of view of the color which can vary from bright fuchsia to antique pink, especially depending on the point of maturation;
Internal appearance: the paste is creamy white in colour, which fades to pink towards the rind, the structure is soft and tends to be creamy under the rind, there may be fine, irregular, sparse and uneven eyes;
Aroma: on the nose, the first thing that emerges is a fruity and citrus smell, but there are also vegetal sensations of cauliflower and ammonia notes, mainly due to the flowery rind, while inside the paste there are clear notes of cream, butter and walnut, it also strikes a blood-ferrous sensation of red turnip;
Taste: Medium intensity sweet, medium – low salty, medium acid and low bitterness, while the aromas confirm what is perceived on the nose with greater intensity.
