Fresh cheese produced with cow and sheep milk, it is an alternative to Giovane when in some months of the year there are shortages of quantities of sheep’s milk due to the biological cycle of the animals.
It is made with the same processing technique as the Giovane, but the raw material or milk varies. By using this mixture of two milks, an even sweeter and more delicate cheese is obtained on the palate, soft and creamy in consistency and slightly less fatty, but be careful, it cannot be defined as pecorino since it is a mixture of two milks.
The rind is edible.

Shape: bowl-shaped, also typical of Tuscan sheep’s cheeses, cylindrical with flat faces and convex and rounded sides;
External appearance: very thin and smooth rind with a color that can vary from creamy white to straw yellow, which varies in intensity depending on the days of maturation;
Internal appearance: the paste is compact, creamy white in colour, soft and sticky when cut, with homogeneous holes but scattered irregularly;
Aroma: on the nose of cream, fresh butter and a slight hint of yeast;
Taste: sweet, slightly salty with hints of fresh grass, has a slightly sticky texture, of medium persistence.
- Food pairings:
Excellent on a cheese platter or on a platter as an appetizer with cured meats. Also interesting if used in recipes, it blends very well making a liquid cream.
- Wine pairings:
Still or sparkling white wine, but with little structure.
