2020, a terrible year, left us a legacy of this amazing cheese, made because we had an excess of cheese, and instead of making many small wheels we had some large wheels of pecorino produced, in fact each wheel of these has the content of 8 Piparello forms. But its uniqueness lies not in its size, but in the fact that it is produced not with whole milk, as everyone does, but with semi-fat milk, i.e. a quantity of cream is removed from the milk, thus losing product yield, but making a less fatty cheese.
The name, Matusalem, taken as inspiration from the world of wine, suggests that it is a large cheese, in fact the production technique is the same as our Piparello, (another historic cheese), but being a wheel weighing around 22 kg it corresponds approximately 8 shapes weighing approximately 2.8 kg, this is the case for the Mathusalem bottles which contain a capacity of 6 litres, equivalent to 8 classic bottles.
An impressive cheese, large in size, in fact it is the largest in our entire assortment of pecorino cheeses, it is put on the market after approximately 12 months of aging in caves.
The taste is something amazing, an elegance, a balance, a pleasantness on the palate that is impossible to describe. There is only one problem: few will be able to taste it because the production is only 10 wheels per year, so only those who book it in time can guarantee this true exclusivity.

Shape: cylindrical, with a slightly convex heel and flat faces, 37 cm in diameter and weighing approximately 22 kg;
External appearance: ribbed, slightly canestrato brown in colour, more or less dark due to sweating during ripening and treatment with oil and wine vinegar in the rind during ageing;
Appearance: a compact, semi-hard and crumbly paste, ivory in colour with a medium-thick nail;
Aroma: the nose has hints of cooked butter and vegetable notes such as dried fruit and a toasty flavour near the rind, as well as a slight smell of undergrowth and a medium to strong animal scent;
Taste: very sweet, delicate, pleasant, mellow, it is neither intense nor aggressive; as it matures, it may become slightly piquant, but very pleasant and appetising.
- Food pairings:
A great cheese, to be enjoyed as an aperitif, on the cheese plate, in hors d’oeuvres with sliced meats, but also at the end of a meal. It is also excellent for use in cooking, cut into slivers over carpaccio or used to whip up pasta dishes. Sometimes also used in buffets or in wine bars as an aperitif.
- Wine pairings:
It can be paired with great structured white wines, although it plays better with reds, even a bubbly.
