It belongs to the family of natural blue cheeses, so there is no addition of noble mold during the cheese making, the only ingredients are milk, salt and rennet.
It is in the second phase of maturation that, after drilling, alongside the shapes of the rye loaves, spores are formed naturally attracted by the drying of the dough, which allow the formation of the characteristic bluish streaks.
For this characteristic type of processing we can have more or less muffled shapes inside, in fact, just for this characteristic, it is called white-blue because it will have a prevalence of white over blue.
Not edible crust.
In 2017 and 2018 at the national competition INFINITI BLU cheese that is celebrated every year in Gorgonzola, has obtained the recognition of Quality.

Ingredients: MILK of pasteurized cow, lactic acid bacteria, rennet and salt.

Product features:
Shape: cylindrical with flat faces and convex heel;
External appearance: the rind is smooth but slightly rough, with a hard consistency and a grey colouring with ochre-orange patches; in the heel, in addition to cracks due to ageing, there are holes made to allow oxygen to enter during the refining phase;
Internal appearance:this cheese has an irregular marbling and therefore an uneven distribution of moulds; the paste in the centre is ivory-white until it reaches a deep straw yellow colour near the rind;
Odour: lactic of cooked butter, vegetable, porcini mushroom and mould, also a hint of animal, characteristic smell of barn and a hint of ammonia in the crust;
Taste: medium to low sweet and salty, a slight note of acidity, very appetizing and balanced.

Availability: limited

Food pairing: cheese for the whole meal, usable at any time and in any way, raw cooked, first courses, appetizers and main courses.

Oenological pairings:Sweet Tuscan Vin Santo, a malvasia, a late harvest, a Aleatico from Elba or a passito from Pantelleria, always to stay in Italy.
