This parallelepiped-shaped blue cheese with a rectangular base is first layered and then covered with a glaze. We use a dark chocolate charade with some meringue crumbs and a white chocolate charade with some pistachio crumbs and in some shapes we put the black outside and the white inside and in others the opposite, i.e. the black chocolate and meringue filling and the white chocolate and pistachio outside. We call it a surprise, precisely because the person who orders it is not given to know whether it will be one or the other inside the package, but will only find out when the package is opened.
The fun game to be played during the tasting is to see which of the two chocolates best suits the contrast with the cheese, and from the first tests we did with the public, before offering these cheeses for sale, the answer is purely subjective, i.e. there was an ex-aequo. Technically, we can say that the greater sweetness of the white chocolate very much mitigates the blue cheese, while the dark chocolate contrasts impetuously with the cheese while enhancing its vegetal and animal notes.
Of course you can eat it all, but the only recommendation we make is to enjoy it in cubes of about one centimetre with the respective piece of chocolate attached, because only in this way can you appreciate all the elements properly.
We recommend slicing it horizontally.

Shape: parallelepipedal with a rectangular base, flat faces and straight heel;
External appearance: the outside is dark brown, almost black or white (depending on the coating), with the presence of white meringue or green pistachio grains;
Internal appearance: the paste is soft but compact, slightly moist, the colour of the paste is ivory white, while the marbling is blue with light green veins, with an even and regular distribution of the moulds; in the centre it has two longitudinal cuts with the filling of the opposite colour to the external colouring
Aroma: towards the outside, the smell of chocolate prevails, but in the cheese paste there is an animal sensation of stable, cooked lactic, vegetable with hints of undergrowth;
Taste: medium savoury, medium sweetness, medium low acidity, low bitterness, obviously tasting with chocolate depending on whether it is white we will have a connotation more tending towards sweet and tasting black a greater tendency towards bitterness and acidity.

We absolutely recommend it as an end-of-meal, dessert or meditation cheese.

Any sweet dessert wine, but also some super spirits.
