It belongs to our “non-cheese” or rather cheese/dessert/pastry, to be used as a dessert or at the end of a meal. We called it “Chic-Thing” because it is a “thing” or a small cheese, a small thing, but with a very elegant appearance so it is Chic, therefore very posh.
This blue cheese made from cow’s milk is not spicy, but delicately sweet, it is filled with raspberry powder and maraschino liqueur, it is then covered in white caramel chocolate, with peanut paste and decorated with whole dehydrated raspberries, which rehydrate when in contact with the humidity of the cheese.
It’s almost a shame to cut it because of how beautiful it is to look at, then when you taste it, a variety of sensations, resulting from the marriage of the acidity of the raspberries and the sweetness of the chocolate, mixed with the flavor of the cheese. Its marbling is not so evident, because in such a small cheese there is little texture on which it can develop, but the animal and undergrowth sensation can be perceived, especially in the finish.
It has no rind, so it’s all edible, the only recommendation we make is to be careful about the cut, so make portions being careful to serve a balanced quantity of cheese and chocolate otherwise there could be different perceptions.

Shape: cylindrical, with flat faces and straight heel;
External appearance: light brown external part, with the presence of raspberries;
Internal appearance: the paste is soft but compact, slightly moist, the color of the paste is ivory, while the marbling is sage green, with a homogeneous and regular distribution of the moulds, even if not very evident;
Aroma: for such a small cheese, the contamination of the smells of caramel chocolate, with a note of peanuts, is evident and prevails over the rest, but by insisting well on the cheese paste you can perceive the stable animal, cooked lactic, vegetal fermented herbaceous with hints of undergrowth;
Taste: medium flavor, high sweetness, medium-low acidity, in general all very balanced and medium persistent.

We absolutely recommend it as a cheese at the end of a meal, for dessert or for meditation.

Any sweet dessert wine.
