This is a mini blue cow’s milk cheese, it is not tangy, but delicately sweet, it is first refined in Saronno amaretto and then stuffed inside with crumbled macaroons and agave syrup. So, do you think it’s not a cheese anymore? Well, first it has to be tasted … because regardless of the ingredients that characterize it, after tasting you can perceive all the animal and typical notes of blue cheese. It was not easy to balance the bitter with the sweet, sour and salty, which is precisely why it is recommended to taste it so that you can then allow yourself to judge the result obtained.

Obviously, it is not a cheese to be enjoyed as an appetizer, but it is recommended to taste it at the end of a meal or as a meditation, perhaps paired with a dessert wine.

The only recommendation, given its small size, is to start and finish it quickly so as not to lose all the organoleptic characteristics contained therein.

The crust is obviously edible.

Ingredients: Pasteurized cow’s MILK, milk enzymes, rennet, salt, penicillium, macaroons (sugar, rice flour, EGG white, apricot almonds, flavoring), Amaretto liqueur (water, sugar, alcohol, flavoring, glucose syrup), agave syrup.

Product features:

Shape: Cylindrical, with flat faces and straight heel;
External appearance: Amber-colored exterior, with the presence of macaroons;
Internal appearance: The paste is soft but firm, moist, the color of the paste is ivory, while the marbling is sage green, with an even and regular distribution of molds, although not very evident;
Smell: The first thing on the nose is the smell of dried fruit, almond, but also the animal feeling of barn, of cooked lactic, fermented herbaceous vegetable with hints of underbrush;
Taste: Medium savory, high sweetness, medium low acidity, in general all very balanced and medium persistent.

Availability: Very limited, production occurs sporadically, at the discretion of the season and availability of raw materials.
Gastronomic pairings: absolutely recommend it as an end-of-meal, dessert or meditation cheese.
Oenological pairings: Any sweet dessert wine.
