Spicy pumpkin jam

Very delicate and fragrant, which leaves room for imagination for combinations and uses, both with cheeses but also for other preparations.

The preparation process involves a washing and sorting phase of the pumpkin used, followed by an initial concentration cooking then proceeding with the addition of sugar and lemon juice and spicy chilli powder and finally concluding with the final cooking to obtain a adequate gelling.
The product is still at boiling temperature and packaged in glass jars.
Subsequently we proceed with pasteurization in an autoclave.
The product may undergo a natural color variation.
