We named it “Nerone” because it is a large cheese in size and black in color, not huge but definitely our largest size goat cheese.
Goat milk cheese made from pasteurized, presamic coagulation raw and pressed milk.
Nice to look at, with well-spread eyes throughout, but most importantly a well-balanced taste, the goat is noticeable but not overpowering, appetizing, great for an aperitif, but also as a cutting board.
Pasteurized goat MILK, milk enzymes, rennet, salt. Surface treated with vegetable charcoal and preservative E235.
There may be traces of cow’s and sheep’s milk.

Shape: Regular cylindrical with flat faces and convex heel with rounded edge;
External Appearance: the rind is slightly smooth black in color (due to rind treatment), you can see the weave of cloth with which the cheese is wrapped during production
Internal appearance: inside, the paste is deep ivory almost straw-colored, darker in color on the undercrust; small to medium-sized and evenly scattered eyes are present
Aroma: you can perceive in addition to the lactic sensations of cooked butter, vegetal notes of fermented grass, and a delicate ircinous scent, typical of goat cheeses
Taste: medium sweet and medium low salty, a low acidity, has a good persistence, in the mouth is slightly sticky and medium grainy.

Aperitif, cheese plate, appetizer, or end-of-meal.
- Wine pairings:
Full-bodied white or red wine with good structure.
