In making this cheese we have been inspired by a farmer’s philosophy based on simplicity, as a consequence, this pecorino owes its particular characteristics to the way it is refined. It is placed in large terracotta jars, known as ‘’Orci’’ or ‘’Ziri’’, used in the past to preserve extra virgin olive oil, a precious product made with patience and hard work. These containers are useful to enhance the quality of our pecorino. The jars are carefully lined with olive leaves and small branches, the cheese is then placed in them where it absorbs an unforgettable flavour during the refining period.
Pasteurised sheep MILK, live milk enzymes, rennet, salt. Treated in crust with oil and olive leaves.

SHAPE: it has an irregular cylindrical shape with uneven surfaces and sides; the irregular shape is due to shape alterations caused during the refining process.
EXTERNAL FEATURES: the rind is thin and wrinkled with bits of olive leaves on it from the refining process. The colour is a pale straw-yellow with traces of mold.
INTERNAL FEATURES: the cheese paste is chalky, pure white, but turns into a very pale yellow near the rind. There are no eyes in the paste.
AROMA: scents of butter as well as slight hints of cauliflower and other boiled vegetables.
TASTE: it crumbles in the mouth, it is balanced, salty as well as sweet, at times a little bitter and astringent due to the aromas absorbed from the olive leaves.

Ideal on a cheese platter, as starter, or for a tasting of pecorino cheeses.
- Wine pairings:
Best paired with full-bodied and well-structured red wines.
