We tried to give a second life to a product that was a waste product and destined to be thrown away. That’s right, the Biobacche Toscane Farm that produces a variety of agricultural products, including some wonderful special juices made by pressing fruit. In this case, with the production of their blueberry juice, the skins represented a waste and we used them as an ingredient for the refinement of our pecorino.

The result surprised us, because it gave the product not only the typical coloring tending to dark blue-purple, but also the flavor of the cheese was pleasantly contaminated by it.

In fact, we can say that this is a first experiment that will surely give birth to other new cheeses, thanks to this collaboration.

The rind is of course edible.

Ingredients: Pasteurized sheep’s MILK, milk enzymes, rennet, salt, blueberry skins.

Product features:

Shape: regular cylindrical with flat faces and convex heel – bowl-shaped;
External appearance: the rind is slightly wrinkled and moist, dark blue – purplish in color due to the blueberry skins coloring and partly sticking to the rind;
Internal appearance: inside, the paste is ivory-white and chalky, although the color may tend to pale straw-colored, with dark-colored nail on the under-rind; small and evenly scattered eyes are present;
Odor: you can perceive in addition to the lactic sensations of cooked butter, vegetal notes of fermented grass, the characteristic fruity note of blueberry, with its pleasant and characteristic animal sensation that comes out especially after tasting it
Taste: medium sweet and medium low salty, medium acidity, has good persistence, slightly sticky in the mouth, medium grainy and very crumbly.

Availability: limited and rare, as it is produced sporadically and with very few units.

Food pairings: excellent in cheese platters, as an appetizer or to make tastings in a horizontal pecorino.

Wine pairings: we recommend an aromatic white wine.
