The story of this cheese has ancient origins and in fact, it is aged “in the old way”. The name “CROCCOLO” derives from “CROCCOLA” (or “Coccola, Gazzozzola”and many other terms which change from valley to valley) the fruit of the Tuscan cypress tree. The “Croccola” evokes intense scents typical of the plant, and these same scents can be found in the rind of this cheese. When we smell it the intense aromas reveal its origin. The “CROCCOLA” is a hard and resinous fruit, almost impenetrable and just like it this pecorino has a very hard rind due to the long ageing period in our grottoes at natural temperature and humidity, as was done in the past.
In 2012 he has won 1st Place at “San Lucio Trophy”.
In 2014 it obtained a Special Mention at “ALMACaseus” contest.
In 2017-2018 it obtained the Gold Medal at World Cheese Award in London.
Pasteurised sheep MILK, live milk enzymes, rennet, salt. Treated in crust with grape-seed oil and wine vinegar.

SHAPE: cylindrical, with slightly rounded sides, about 12 cm thick, and the flat surfaces are about 18-20 cm wide.
EXTERNAL FEATURES: the rind is very hard and brown with irregular and darker spots which change according to the ageing process and the typical treatment of the rind.
INTERNAL FEATURES: the straw-yellow cheese paste is hard and compact, but crumbly and with some eyes. The undercrust is almost one centimetre thick.
AROMA: it has a complex aroma displaying traces of cooked butter and toasted nuts, as well as hints of clean fleeced sheep and barn scents of medium intensity.
TASTE: it has an intense slightly piquant flavour, which may increase with ageing, yet it is very pleasant and tasty.
- Food pairings:
Perfect for aperitif on a cheese platter, starter with cold cuts, and as a dessert cheese. Excellent in kitchen recipes, flakes over carpaccio, risotto, and pasta dishes.
- Wine pairings:
Goes well with wines like Brunello di Montalcino, Nobile di Montepulciano, Sassicaia, Amarone, and other great wines.
