The preparation process involves a washing and sorting phase of the onions and chillies used, followed by an initial cooking together with the addition of lemon juice and apple cider vinegar for concentration and finally sugar is added, concluding with the final cooking for obtain adequate gelation. The product is still at boiling temperature and packaged in glass jars. Subsequently we proceed with pasteurization in an autoclave.
A combination with a coarse and fragrant texture, which leaves room for imagination in combinations and uses. The product may undergo a natural color variation.
