The preparation process involves the washing and sorting phase of the figs used, followed by an initial concentration cooking then proceeding with the addition of sugar and lemon juice and finally concluding with the final cooking to obtain adequate gelling.
The product is still at boiling temperature and packaged in glass jars.
Subsequently we proceed with pasteurization.
