Small knives with a heart-shaped blade can be used to shell hard cheeses such as Croccolone, Gran De’ Magi, Grancacione or Grana Padano and Parmigiano Reggiano.
It is an instrument of great effect, beautiful because it is made entirely of steel, but above all for the impact that its use can give. Think for example, serving at the table a form of mature pecorino cheese, even a small one such as the Piparellino or the Crosta d’Oro Mini, and together with the cheese (which you will have opened from above or in half horizontally) provide the mini knife to allow your diners to dig out the cheese themselves… this becomes an almost familiar gesture that you do with your customer but not only that, you will be able to leave a positive impression on your customer’s mind because it is certainly not a usual gesture.
It can be used either to accompany an aperitif or for an appetizer proposal, or in large ceremonial buffets it allows smaller flakes to be cut and is certainly more “human-scale” than the classic Pavia knife which we consider to be a more professional.
