Who says you can’t eat it first with your eyes than with your mouth? This cheese certainly impresses and intrigues just by looking at it.
The name poker d’assi (aces’ poker) is apt because the figures of playing cards are imprinted on the rind, i.e. spades and clubs with charcoal and diamonds and hearts with sweet paprika.
Basically, it is a cow’s milk cheese, known as ‘double-cream’ because cream is added in the process. Once the first part of ripening has been done, it is treated in the rind with annatto and then sprinkled with the ingredients that characterise its colour and figure.
