The preparation process involves a washing and sorting phase of the vegetables used followed by an initial cooking and then proceeding with the addition of Lemon Juice and then Sugar. It continues with the addition of sugar and ends with the final cooking. The product is still at boiling temperature and packaged in glass jars. Subsequently we proceed with pasteurization in an autoclave.
