The wire bow is an essential tool for the precise cutting of soft and tender cheeses, the handle is used to apply the right pressure for cutting, while the wire passing through the product will cut it cleanly without having the adhesiveness that would have with the knife.
Ideal for fresh, fresh and soft chalky cheeses, the important thing is that they do not have a semi-hard or hard rind, therefore used for gorgonzola or blue cheeses, brie and taleggio, flowery rinds, goat’s roll and various types of chalky goat cheese.
This knife consists of a sturdy handle that holds a thin, taut metal wire, similar to a bow. Its main function is to guarantee a clean and uniform cut, avoiding deformation of the cheese and keeping its structure intact.
Using the wire bow is simple, but requires some attention to get the best results:
Placement: Place the cheese on a stable, clean surface.
Thread tension: Make sure the thread is tight to prevent it from bending or breaking while cutting.
Cutting: Apply even, firm pressure, sliding the wire through the cheese in a smooth, continuous motion. It is important to keep the wire perpendicular to the cutting surface to obtain even slices.
Cleaning: Clean the line after each cut to prevent the accumulation of residues that could compromise the effectiveness of the next cut.
For the correct cutting of cheeses, first of all it is necessary to know their respective characteristics well, not only external ones, but also internal ones, as you could damage the cheese paste by using a knife that is not suitable for use. Obviously the question may arise spontaneously, that is: but as long as the knife has a sharp blade, any knife can cut any cheese… of course yes! However, if you use a knife with serrated edges, you will leave the streaks caused by the non-smooth blade in the cheese paste, but the simplest thing to understand this concept is just think about wine. It’s true that any glass can contain wine, but if you want to experience pleasure not simply in drinking it but in tasting it, then the correct glass should be paired for each wine, and therefore also for the cheese, to cut in a suitable way to present the cheese to a tasting requires having the correct knife but above all knowing the correct technique.
