Blue Amarello

This is a mini blue cow milk cheese, it is not tangy, but delicately sweet, it is first refined in Saronno amaretto and then stuffed inside with crumbled macaroons and agave syrup. So, do you think it’s not a cheese anymore? Well, first it has to be tasted … because regardless of the ingredients that characterize it, after tasting you can perceive all the animal and typical notes of blue cheese. It was not easy to balance the bitter with the sweet, sour and salty, which is precisely why it is recommended to taste it so that you can then allow yourself to judge the result obtained.

Obviously, it is not a cheese to be enjoyed as an appetizer, but it is recommended to taste it at the end of a meal or as a meditation, perhaps paired with a dessert wine.

The only recommendation, given its small size, is to start and finish it quickly so as not to lose all the organoleptic characteristics contained therein.
