A touch of the Orient touched our Master Refiner, and thus the idea of ​​creating something new, unique, and highly innovative was born.

This tiny blue cheese was born, the smallest in our assortment and one of the smallest blue cheeses in the world. It is a 170g cube of cow’s milk and is produced without animal rennet, using a microbial coagulant instead, making it suitable for vegetarians. In addition to its sensory characteristics, we wanted to offer a healthy cheese, as it is also lactose-free, making it suitable for those with lactose intolerance.

It features a very delicate blue veining, with a soft, melting texture, very soluble and buttery. On the outside, it has a bloomy rind and is refined with Matcha green tea powder and nori seaweed.

Its captivating appearance certainly doesn’t go unnoticed, but it becomes even more distinctive with every bite, given that the texture of the rind is completely different from that of the cheese. These seemingly discordant aromas on the nose are perfectly balanced on the palate.

This significant yet not cloying sweetness, along with the evident but not overpowering maturation, provides a good foundation for the cheese’s structure.

If we had to summarize how to describe this cheese in a single word: Elegant both to the eye and to the palate.

The rind is edible.

In 2025, it received the Plaque of Excellence at the INFINITI BLU National Competition, and in 2026, the “Superior Quality” award.
