As part of our Master Affiner’s tradition, every new journey to a foreign country is celebrated by creating a new cheese.
This particular cheese was created with our American clients in mind, as the name itself carries a message in English. In Italian, it reads GODO, but when written separately as Go Do, it embodies a phrase that Andrea Magi enjoys sharing in English: ‘I GO to the USA and I DO a new cheese.’
Inspired by North America, this cheese doesn’t just share a name but also features ingredients that are more characteristic of that continent than of Italy, with Pecan nuts and maple syrup being the key elements.
The result is a fantastic cheese: delightful, flavorful, intriguing, and utterly appetizing… truly a treat for the senses! It’s such a pleasure for the palate that, given its small size, once you start, it’s hard to stop—one bite leads to another!
We recommend pairing each slice with a piece of Pecan to harmonize the flavors carefully crafted in this recipe.
