Product description

These scamorza sticks are the size of a small hot dog.  Scamorza is a spun-paste cheese of whole pasteurised cow milk. The paste is like mozzarella paste, but drier.  After the paste has been made it is rolled with a pin with wholes that cuts the paste into a stick-like shape, they are first cooled and then cold-smoked (with Beechwood chips, below 18°C), so they can acquire the distinctive aroma and flavour.
Best served warm.

Ingredients: whole cow MILK, salt, rennet.
Weight: Approximately 25 g sticks.
Packing: heat sealed tray.
Shelf life of packed product: 20 days.

ALLERGENS: MILK and MILK protein.

Cheese characteristics:
SHAPE: round and long, the size of a thin hot dog.
EXTERNAL FEATURES: the caramel coloured skin is smooth, glossy , uniform and of medium consistency.
INTERNAL FEATURES: the paste is creamy white, stringy and soft, when cut it is uniform and even.
ODOR:  intense smoky scents.
FLAVOUR: tasty, mildly salty and pungent due to smoking.

Availability: all year, but must be ordered.

Food pairing:  can be served at aperitivo or antipasto as something different and special. Also good with salad, cold cuts and even better if they are served warm in oven after being wrapped in speck, lard, prosciutto or pancetta.

Wine pairing: very tannic red wine.
