Isotta the shit, perfect if you get it cooked… is that funny? A little, yes, but it’s all true.
This cow’s cheese with a clean rind is a simple cheese if eaten raw, but finds a second life if you taste it warm, given its structure can melt and spin almost like a pasta filata, but with a totally different flavor. It is sweeter, tastier and more aromatic than mozzarella but above all the melting of the cheese has a greater consistency than mozzarella because it does not release water.

If the rind is clean, it is edible, but since it is a cheese that after a while is removed from the vacuum and is subject to mould, if it is very moulded, it is better not to eat it, not because it is dangerous for the health, but because it alters the organoleptic characteristics of this cheese.

 

Ingredients: MILKS, rennet and salt.
Size: about 2,2 Kg.
Packaging: vacuum packed.
Duration of the packaged product: 30 days.

ALLERGENS: MILK and MILK proteins.

Product features:
Shape: cylindrical with flat faces and straight sides, even if slightly convex;
External appearance: medium thick, dry rind; if clean, it has a deep straw colour;
Internal appearance: soft, slightly elastic paste, sticky to the cut, the eyes are evenly distributed, small-medium in size and irregular, the colour is pale straw yellow;
Odour: lactic of fresh butter, vegetable of grass, with a slight animal scent;
Taste: sweet medium-high, then salty medium-low, a slight acid note, the paste is compact, grainy, deformable and adhesive.

 

Availability: all year round, but in limited quantities.

Food pairings: excellent as an aperitif, included in a dish with cold cuts, but fantastic for the preparation of dishes given its propensity to melt and spin.

Oenological pairings: white wine, red wine not very structured, but also a bubble is very good.
