It is a “two-milk” cheese because it uses the mixed milk of sheep and cow, whose rind is washed with a particular gin from the province of Siena called Senensis. The peculiarity of this Gin London Dry are the botanists used: Rosemary, tarragon, verbena and olive leaf.
Once the various washing steps with gin are completed, dried tarragon leaves and rosemary needles are added, then the crust begins to feather slightly with a layer of white mold.
Obviously the rind is not only edible, but it is essential to eat it because it acquires all the aromatic characteristics of the Gin itself.
Ideal for aperitifs, appetizers, but also in a plateau of cheeses.
Ingredients: Cow’s milk and pasteurized sheep’s milk, pasteurized CREAM, lactic acid bacteria, rennet and salt. Treated in a crust with Gin London Dry Senensis, tarragon and rosemary.
Size: about 270 gr.
Packaging: in wooden tray and wrapped with heat shrink film.
Duration of the packaged product: 25 days.

Product features:
Shape: square-based parallelepiped with flat faces and straight sides, sometimes with irregularities as it tends to deform during maturation, creating domes and depressions;
External appearance: very thin and slightly moist and sticky rind, its colour is straw yellow covered with a light coat of penicillium candidum which gives it a white colour and the presence of dried leaves of tarragon and rosemary needles;
Internal appearance: the paste has a finely uneven and irregular look, is ivory in colour, soft and sticky when cut, and tends to protect with increasing ripeness;
Odour: of cream and fresh butter, vegetable of fresh grass, it has a scent of undergrowth in the crust together with the aromatic vegetal sensation of rosemary and hay as well as a slight note of fermented;
Flavour: sweet, not very salty, it has a slightly adhesive paste, but all in all fairly soluble, slightly grainier in the crust and of medium persistence.
Availability: limited, being an experimental cheese is always available.
Food pairings: in a mixed cheese dish, in an aperitif buffet, or as an appetizer.
Oenological pairings: usually an aromatic white, but you should also try pasta with the same Gin Senensis, which will prevail over the cheese, but you will find the aromatic characteristics.
